To Make you will Need:

  • 200g unsalted butter
  • 200g golden caster sugar
  • 200g self-raising flour
  • 3 medium eggs
  • 2 tsp vanilla extract
  • 1 tablespoon milk
  • Whisk
  • Cupcake cases
  • Baking tray
  • Tub of Mr Kipling Space Vanilla Icing
  • Freezer Bag or piping bag
  • Icing Sugar and sieve

To Make:

  1. Pre-heat the oven to 180°C / 160°C fan / gas mark 4.
  2. Place your cupcake cases into your baking tray.
  3. Put the butter and sugar into large bowl and whisk them until it becomes fluffy and turn a lighter yellow colour.
  4. Add in the eggs one at a time, beating the mixture well after you add each egg.
  5. Add in the vanilla extract and mix.
  6. Gently fold in the flour and add the milk.
  7. Stir just enough that it makes a smooth batter that drops off your spoon.
  8. Add red food colouring into the batter and mix so its all coloured. Scoop the cake batter into the cupcake cases and place into the oven.
  9. Cook for 20 – 25 mins. You can check if cooked by pushing a skewer into the cake, if it comes out clean, they are cooked.
  10. Place on wire cooling rack for them to cool down. Once the cakes have cooled cut the sponge flush to the top of the cupcake case. With what you have cut off the top then cut that into halves.
  11. If you want to spend a bit more time and make your own buttercream icing you can, but we wanted to save a bit of time so used the Mr Kipling pre-made blue icing. If you have a piping bag perfect, if not a freezer bag will also work. Just scoop the icing into the bag, push down into the corner and cut the end of the bag off to make a hole. Pipe the icing onto the top of the cakes, placing the two halves of the sponge you cut earlier on top of the icing to look like butterfly wings.
  12. To finish off sieve some icing sugar onto them.

Deviled Eggs

deviled eggs dyed red and blue

To Make you will Need:

  • How ever many eggs you want to serve, we found large eggs work best.
  • Red and blue food colouring
  • Mayonnaise
  • Pepper
  • Paprika
  • Saucepan to boil the eggs.

To Make:

  1. These are a colourful twist on your usual delicious finger food.
  2. Hard boil all the eggs as normal in a saucepan. Once boiled, place them into cold water and pop in the fridge, this stops the yellow yolk turning grey.
  3. Once completely cooled, peel the eggs. Get two bowls filled with enough cold water to cover the peeled eggs. Drop a few blue food colourings in one bowl and red into the other. Place the peeled eggs into the bowls and leave for around 10 minutes which will be long enough to dye the outside of the hard-boiled eggs.
  4. Then slice them in half longways. Scoop out the yellow yolk into a bowl and mix it with a bit of mayonnaise, ground black pepper and pinch of paprika.
  5. Mix to a spicy taste that you like, then you can divide the mix into two and drop from food colouring into each yolk.
  6. You then need to scoop the yolk back into the boiled eggs, so if you have a dyed blue outside egg you want to add the red yolk into it and vice versa.
