Easter Egg Biscuit Recipe

At Easter it’s a fab time to get in the kitchen and enjoy some baking with the kids and we have a really Easy Recipe to make some Yummy Easter Egg Biscuits with them

 

Ingredients

  • 125g Unsalted Butter
  • 125g Golden Caster Sugar
  • 250g Plain Flour
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • Icing Sugar
  • Various Food Colourings, we use these natural food colourings from Amazon here 

 

What Else you will Need

  • Large Mixing Bowls
  • Electric Whisk, we recently upgraded ours and got it from Amazon here  
  • Wooden Spoon for mixing
  • Rolling Pin
  • Easter Egg Biscuit Cutter, we used this embossed one from Amazon here 
  • Greaseproof Paper
  • Baking Tray

 

These biscuits were really easy to make. We decided to use an embossed cookie cutter so it was easier for the kids to copy the pattern, but of course you can always freestyle the design.

Method

  1. Whisk the butter and golden caster sugar together in the bowl until it is smooth and fluffy
  2. Then whisk in the egg and vanilla extract
  3. Stir in the plain flour, mixing until it creates a solid dough that you can lift in one go out of the bowl.
  4. Sprinkle a little flour on a clean work surface and knead the dough lightly on it.
  5. Put the dough onto a clean plate and place into the fridge for 2 hours
  6. After your dough is chilled, take it out of the fridge and once again sprinkle a little flour onto a clean work surface and roll the dough to about 1cm thick
  7. Using your Easter Egg Cookie Cutter, cut out as many as you can, we managed to get 25
  8. Place the Easter Egg Biscuits onto Baking Trays that are lined with greaseproof paper
  9. Pop them into a pre-heated oven at 170°C / Gas 5 for 10 – 15 minutes until they look lightly golden in colour
  10. Get different bowls and mix icing sugar. We mixed roughly 500g Icing Sugar with 60ml Warm water and then added enough food colouring to get the colour we wanted.
  11. Put the icing into piping bags with a thin nozzle or you can put it into a freezer bag and just cut the corner to pipe it out, and then let the kids get creative and ice the top of the biscuits.
