This recipe makes around 25 Cookies which if put in an air tight box can last for a good 3 – 4 days although they never last that long in our house!
- 75g soft margarine
- 125g light muscovado sugar
- 1 free range egg
- 165g self-raising white flour
- 15g coco powder
- 75g dark chocolate chips
- 75g white chocolate chips
How to Make the Cookies
First you will need to cream the margarine and light muscovado sugar together in a bowl and gradually beat the egg in and then add the self-raising flour and coco powder in, mixing well. Once mixed well stir in the chocolate chips
You will need to lightly oil/ grease the baking trays with some margarine and then drop heaped teaspoons of the mix well spaced apart onto the tray and remember they will spread, so don’t put them to close together. If you pre-heat the oven to 180C / Gas Mark 4 then you will only need to cook these cookies for just 10 minutes and when you take them out of the oven, wait a few minutes to harden up before moving them onto a wire rack to cool down
How to Make other Flavours
So, if you want to make other flavours you just leave out the coco powder and lowered the self-raising white flour to 100g. Then swap the 75g chocolate chips for something else like 75g cherries and 75g apricots.
As a little treat you can always eat these cookies whilst they are still a little warm and a the chocolate still a bit gooey and add ice cream and squishy cream Mmmmmm….. # Enjoy
